Layers of chocolate cake, dark chocolate mousse, white chocolate mousse and chocolate ganache.

- For the Chocolate Cake
- 2 cups (240g) All-purpose Flour
- 2 cups (400g) Granulated Sugar
- ½ cup (50g) Cocoa Powder
- 1 ½ tsp Baking Powder
- 1 ½ tsp Baking Soda
- ½ tsp Salt
- ½ cup (120ml) Whole Milk (room temp)
- 2 Large Eggs (room temp)
- ½ cup (128g) Sour Cream (room temp)
- ½ cup (110g) Vegetable Oil
- 1 tsp Vanilla Extract
- 1 tsp Espresso Powder
- 1 cup (240ml) Hot Water
- For the Chocolate Mousses
- 4 Large Egg Yolks
- 2 cups (480ml) Heavy Cream
- 2 tbsp Granulated Sugar
- 2 tbsp Cornstarch
- 1 tsp Vanilla
- 3.5 oz (100g) Dark Chocolate
- 4.5 oz (130g) White Chocolate
- For the Chocolate Ganache
- 5 oz (140g) Milk Chocolate
- ⅓ cup (80ml) Heavy Cream
Instructions
- Preheat oven to 350°F (180°C) and grease two 8-inch cake pans.
- Sift and whisk dry ingredients. Mix wet ingredients separately, then combine both. Dissolve espresso powder in hot water and mix in.
- Divide batter into pans and bake 35 minutes. Cool completely, level layers, and prepare for assembly.
- For mousses: Chop chocolates into bowls. Whisk yolks, sugar, cornstarch. Heat half the cream with vanilla, temper into yolks, cook until thickened. Split into chocolate bowls and stir until melted. Cool to room temp, whip remaining cream and fold into each mousse. Spread dark mousse over cake layer, then white mousse. Chill 30 min, add second cake layer, chill 4 hours.
- For ganache: Heat cream and pour over chopped milk chocolate. Stir until smooth. Cool to spreadable consistency and spread over chilled cake.
- Decorate and serve. Enjoy!
