- 4 (6-ounce) skin-on salmon fillets, about 1-inch thick
- 1 tablespoon honey or pure maple syrup
- 1 tablespoon white or brown miso
- 1 tablespoon rice vinegar
- 1 tablespoon low sodium soy sauce
- 1 tablespoon minced ginger
- 1/4 teaspoon red pepper flakes (optional)
- Chopped green onion or cilantro, for serving
- Toasted sesame seeds (optional), for serving
- Cooked brown rice (optional), for serving
Instructions
- Preheat oven to 400°F. Line a 9×13-inch dish with parchment or foil. Pat salmon dry and place skin-side down in dish.
- In a small bowl, whisk maple syrup, miso, vinegar, soy sauce, ginger, and red pepper flakes.
- Spoon or brush half the mixture over salmon. Let sit at room temperature for at least 15 minutes or marinate up to 12 hours (bring to room temp before baking).
- Bake salmon for 7 minutes. Remove from oven, brush with remaining marinade, then return to oven for another 6–8 minutes, until cooked through and internal temp reaches ~140°F. Rest for 5 minutes.
- Serve warm with green onion or cilantro, sesame seeds, and brown rice if desired.
Notes
- To store: Refrigerate in an airtight container for up to 2 days. To freeze, store in a freezer-safe container for up to 3 months.
- Reheat gently in oven at 350°F or in microwave. Thaw overnight if frozen.
