Description
This one pan Marry Me Chicken Pasta is a creamy, dreamy family favorite with sun-dried tomatoes, spinach, and parmesan — all ready in about 30 minutes.

- 650g (1.4 lb) boneless & skinless chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- 3 garlic cloves, peeled and crushed
- 170g (6 oz) sun dried tomatoes, drained and very finely chopped
- 1 tsp oregano
- 2 tsp paprika
- 250g (9 oz) dried pasta
- 650ml (2.75 cups) chicken stock
- 150ml (0.75 cups) double cream (heavy cream)
- 50g (2 oz) parmesan, grated
- 120g (4 oz) spinach
- Freshly ground black pepper
Instructions
- In a large deep frying pan, heat the oil over medium heat. Add chicken pieces, season with pepper, and cook for 5 minutes, stirring occasionally, until lightly browned.
- Reduce heat, then add garlic, sun dried tomatoes, oregano, and paprika. Stir for 3-5 minutes until garlic is softened.
- Add pasta and stock, stir well, and cover. Cook for 15-20 minutes, stirring occasionally, until pasta is cooked and most liquid absorbed.
- Reduce heat to low, add spinach and cream, and stir until spinach wilts and cream is heated through. Check chicken is fully cooked.
- Turn off heat and stir in parmesan before serving.
Notes
- Use some oil from the sun dried tomato jar for extra flavor.
- Cooking time may vary depending on pasta shape — add more water if needed.
- If preferred, mince the sun dried tomatoes finely so they melt into the sauce.
