Description
This Boursin Cheese Pasta is a creamy baked pasta with rotini, vegetables, and garlic and herb Boursin cheese. Just 5 minutes of prep and the oven does the rest!

- 12 ounces dried rotini (or similar short pasta)
- 1 pint cherry tomatoes
- 8 ounces sliced cremini mushrooms
- 4 cloves garlic, minced
- 1/4 cup extra-virgin olive oil
- Coarse salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes
- 5.2 ounce round block of Boursin garlic and herb cheese (kept whole)
- 1 cup packed roughly chopped fresh spinach
- 1/4 cup grated Parmesan
- Shaved Parmesan, for topping
Instructions
- Preheat oven to 400°F. Place cherry tomatoes, mushrooms, and garlic in a greased 9×13 baking dish. Drizzle with olive oil, season with salt, pepper, and red pepper flakes, and toss to coat.
- Push vegetables to the sides and place Boursin cheese round in the center. Bake for 30 minutes until tomatoes burst, mushrooms roast, and cheese melts.
- Meanwhile, cook pasta in salted boiling water until al dente. Drain, reserving 1 cup of pasta water.
- Remove dish from oven, add spinach, and stir to wilt spinach and incorporate cheese into a sauce.
- Add cooked pasta to the dish and toss to combine, adding reserved pasta water as needed to thin sauce. Stir in grated Parmesan.
- Serve immediately topped with shaved Parmesan.
